Truth be told, there isn’t much of a difference in terms of interface, but the Pharmaceutical models do offer a bit more customization in terms of settings. The Home Pro models however get the job done just as well and have bigger capacity for the money.

Finding used freeze dryers isn't easy. That's because most people who get them consider them a long-term investment. As such, they hold on to them for years. However, a used freeze dryer or two sometimes makes its way onto the market.
Hrmm... maybe not freeze drying sorbet but I imagine using freeze dried fruits IN sorbet would give a much more intense flavour. Especially for things like watermelon which I've had great trouble sorbeting successfully.
Tray lids– Though freeze drying is underway, you would possibly end up prepping for the next batch. Tray lids are vital in these conditions, preserving your prepped food from contaminants, odors, or unintended spills with your freezer.

The food options we had there were extremely limited and full of preservatives. To counter that, my buddy Lance went in with family members on the purchase of a freeze dryer for home use.
As long as the food is dried to a low residual moisture, vacuum packaging is safe. Remember, vacuum packaging is not a food safety process itself. In fact, removing oxygen from a package may make it more of a concern for the botulism bacteria to grow and produce toxin if there is a moist environment.
